What is the QB looking for/thinking about as he heads to the line? I guess I'm looking for what his progression is in his mind as far as, checking his own players, looking over the defense, anything else he needs to do before the snap (check with me, audibles, etc.)

Depends on what each coach asks. I think you want to give the qb simple things. 1. Is there a safety in the middle of the field? (Since we see mostly 8 man fronts, this means we are probably seeing either cover 1 or 3 2. Now lets look at the corners. I'm reading leverage, depth and eyes for keys to man or zone. 3. Rehearse my reads. If it is a curl flat, I'm reading olb. If it is smash, I'm reading playside corner. etc.

But doesn't he also need to check his team - are they aligned correctly? Some of those non-QB types can be really stupid. Though they've never put their hands under the wrong guy's butt. I know that sounds stupid, but I'm looking for start to finish - EVERYTHING he needs to consider, both on a run and a pass play.

We have the same procedure on every snap: 1st scan left from right: DB Leverage 2nd scan right from left: LB Alignments, Showing Blitz? 3rd scan left from right: DL Alignments, problems with blocking or protection scheme? 4th and last scan from right to left: Alignment of our Receivers, giving visuals and audibles, recognizing feel-LB (for Zone Plays)...
if something happens in the backfield, it´s Coaches Call or Receiver´s Call... WR call out MOFO or MOFC Call, QB has to listen but not to check if there´s a safety.
